Ingredients
  

Pasta Ingredients
  • 7 oz your favorite pasta About 200g, any type you prefer.
For the Sauce
  • 3 oz fresh spinach About 100g.
  • 1 handful basil Large handful of fresh basil.
  • 2 cloves garlic, crushed For robust flavor.
  • 2 tbsp lemon juice Freshly squeezed for acidity.
  • 1 cup coconut milk For creamy texture.
  • 3 tbsp nutritional yeast Adds a cheesy flavor.
  • 1 tsp salt
  • ½ tsp black pepper

Method
 

Preparation
  1. Begin by placing the fresh spinach, basil, crushed garlic, lemon juice, coconut milk, nutritional yeast, salt, and black pepper in a blender. Blend until smooth and creamy.
Cooking
  1. Pour the blended mixture into a large pan and heat over medium flame. Allow it to simmer for about 2-3 minutes.
  2. While the sauce simmers, bring a pot of salted water to a boil and cook your pasta according to the package instructions. Reserve a bit of the pasta water before draining.
Combining
  1. Once the pasta is cooked, add it directly to the sauce and toss to coat. If the sauce is too thick, add a splash of reserved pasta water to adjust the consistency.
  2. Serve immediately, garnishing with extra basil or a sprinkle of vegan cheese if desired.

Notes

For an added kick, consider adding red pepper flakes while heating the sauce. You can also mix in other greens like kale or arugula if preferred. Nutritional yeast enhances flavor but is optional.
