- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, chopped spinach, softened cream cheese, and sour cream. Stir until well blended.
- Add garlic powder, onion powder, salt, and pepper to the mixture and stir to combine.
- Pour the mixture into a greased casserole dish and spread it evenly.
- Sprinkle the shredded mozzarella cheese evenly over the top, and optionally add breadcrumbs.
- Bake for 25-30 minutes or until the top is golden and bubbling.
- Allow the casserole to cool for a few minutes before serving.
Notes
This casserole can be made in advance. Just cover it before baking and refrigerate; it can sit overnight. Feel free to add other veggies like bell peppers or mushrooms for added nutrition.
