Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, chopped spinach, softened cream cheese, and sour cream. Stir until well blended.
  3. Add garlic powder, onion powder, salt, and pepper to the mixture and stir to combine.
  4. Pour the mixture into a greased casserole dish and spread it evenly.
  5. Sprinkle the shredded mozzarella cheese evenly over the top, and optionally add breadcrumbs.
  6. Bake for 25-30 minutes or until the top is golden and bubbling.
  7. Allow the casserole to cool for a few minutes before serving.

Notes

This casserole can be made in advance. Just cover it before baking and refrigerate; it can sit overnight. Feel free to add other veggies like bell peppers or mushrooms for added nutrition.
