  • 2 lbs ground beef (80/20 blend)
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 cloves garlic, minced
  • 4 tbsp keto-friendly taco seasoning
  • 2 tbsp tomato paste
  • 2 medium eggs
  • ½ cup heavy whipping cream
  • 1 ½ cups shredded cheese (cheddar or Mexican blend)
  • 1 medium jalapeno, sliced (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. In a large skillet over high heat, combine the ground beef, diced onion, bell pepper, and minced garlic. Cook until the meat is browned and the onions are translucent.
  3. Drain excess grease from the skillet.
  4. Stir in the taco seasoning and tomato paste until thoroughly combined.
  5. Spread the meat mixture evenly into a 9x13 inch casserole dish.
  6. In a separate bowl, whisk together the eggs and heavy cream, then stir in half of the shredded cheese.
  7. Pour the creamy mixture evenly over the meat layer.
  8. Top with the remaining shredded cheese and optional jalapenos.
  9. Bake in the preheated oven for 15-17 minutes until the cheese is melted and bubbly.
  10. Let the casserole rest for 5 minutes before serving.

Notes

For added flavor, top with chopped cilantro, diced avocado, or sour cream when serving. You can also substitute ground turkey or chicken for the beef for a leaner option.
