- Preheat your oven to 350°F (180°C).
- In a large skillet over high heat, combine the ground beef, diced onion, bell pepper, and minced garlic. Cook until the meat is browned and the onions are translucent.
- Drain excess grease from the skillet.
- Stir in the taco seasoning and tomato paste until thoroughly combined.
- Spread the meat mixture evenly into a 9x13 inch casserole dish.
- In a separate bowl, whisk together the eggs and heavy cream, then stir in half of the shredded cheese.
- Pour the creamy mixture evenly over the meat layer.
- Top with the remaining shredded cheese and optional jalapenos.
- Bake in the preheated oven for 15-17 minutes until the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving.
Notes
For added flavor, top with chopped cilantro, diced avocado, or sour cream when serving. You can also substitute ground turkey or chicken for the beef for a leaner option.
