Ingredients
  

For the Chicken
  • 1 lb 3-4 boneless, skinless chicken breasts Tender and juicy, chicken breasts provide the protein base for this salad.
For the Salad
  • 1 cup bell peppers, thinly sliced Colorful and crunchy, bell peppers add a sweet crunch.
  • 1 cup cucumbers, thinly sliced Refreshing and hydrating, cucumbers bring a cool element.
  • 1 cup carrots, julienned Crisp and slightly sweet, provides a lovely texture.
  • ½ cup fresh cilantro, chopped Adds a burst of freshness and aromatic touch.
For the Dressing
  • ¼ cup creamy peanut butter Forms the base of the irresistible dressing.
  • 2 tbsp low-sodium soy sauce Provides a savory depth of flavor.
  • 2 tbsp lime juice Adds a bright and tart kick.
  • 1 tbsp honey or maple syrup Balances the flavors in the dressing.
  • 1 tbsp sesame oil Enhances overall flavor.
  • to taste Sriracha Add heat to suit your palate.

Method
 

Cooking the Chicken
  1. Heat a dash of oil in a skillet over medium heat.
  2. Add the chicken breasts and cook for 6-7 minutes on each side until cooked through and golden brown.
  3. Remove the chicken from the skillet and let it rest for about 5 minutes before slicing.
Preparing the Vegetables
  1. Chop the bell peppers into thin slices, slice the cucumbers, and julienne the carrots.
Making the Dressing
  1. In a mixing bowl, whisk together the peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, and Sriracha.
Combining Ingredients
  1. In a large salad bowl, combine the sliced chicken and prepared vegetables.
  2. Pour the dressing over the top and mix until well coated.
Garnishing and Serving
  1. Garnish with freshly chopped cilantro and serve immediately.

Notes

For an extra crunch, toss in some roasted peanuts or cashews before serving. You can also customize the heat level with Sriracha.
